So I bought this cookbook from Goodwill, mostly because I loved the cover.
The first recipe I tried was this:
Homemade Basic Pie Dough:
Makes 1 double-crusted 9 or 10-inch pie
...what you'll need:
-2 cups all-purpose flour
-1 tsp. coarse salt
-1 cup (2 sticks) very cold unsalted butter, cut into pieces
-1/2 cup very cold milk or water
1. In a large bowl or in the bowl of a food processor, combine the flour and the salt. Add the butter and cut in or pulse until the mixture resembles a course meal.
2. Pour in the milk. Combine just until the dough holds together in a ball.
3. Turn the dough onto a piece of plastic wrap and left the sides toward the middle to press them together. Remember the less you work with the dough, the better it will turn out!
4. Cut the dough in half. Form each piece into a disk and wrap in plastic. Refrigerate for at least 15 minutes. If the dough has been refrigerated in advance, remove 15 minutes before using. The dough can be made and refrigerated for up to 3 days in advance or frozen for up to 6 weeks.

Oh yummy it looks perfect. I have not tried my hand at a homemade pie crust yet but its on the "To Do" list :)
ReplyDeleteI've never made pie before, so naturally I've never made homemade pie crust, but I didn't realize it was that simple! Coincidentally, I just read an article about how store bought pie crust has one of the worst trans fat levels of any pre-packaged foods! Glad I know how to make my own pie crust now = )
