Cinnamon Swirl Banana Bread [Recipe]

Alright, so on Insta-Fridy I posted a picture of this, so I couldn't help but share the post so soon after! :) Couldn't keep you all waiting in suspense for that long!

So I tried for the first time, freezing bananas that I just could not eat. Every time I opened the freezer they were staring at me, and so finally I decided to make something to see if freezing bananas is actually okay. I know, I know I'm always a skeptical one.  It worked out perfectly!

I found this recipe via Pinterest, via Lovin' From the Oven Blog. 

Here's how my bread turned out:
Cinnamon Swirl Banana Bread

Ingredients:
For the bread:
3 over-ripe bananas, smashed up
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
dash of salt
1 1/2 cups flour

For the swirl:
1/3 cup sugar
1 Tbs cinnamon

Directions:
Preheat oven to 350. Butter and four a loaf pan. Just keep a close eye on it in the oven, and adjust the time as needed

Mix bananas, butter, sugar, egg, and vanilla together. Sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour. Be careful not to over-mix!

In a small dish, mix together the 1/3 cup sugar and 1 Tbs cinnamon.

Add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. 

Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.

Bake for 50-60 minutes, but remember, be careful and keep a close eyeball on it!

The husband and I have been eating this daily for breakfast, ha ha. We haven't gotten old of eating it either, the always has same "awesome" effect every morning. Gotta love Banana Bread! :)

    1. No, not needed for that large of a pan. I used one of our standard Pyrex containers (a 6 cup one I believe). I'm finally getting bread pans for my birthday next week! :)
